Trip of a Lifetime: Europe in 2 months, with 3 kids, on bikes

Dale, the founder and CEO of Bikewagon, is currently touring through Europe with his family. He checked in to let us know how things are going.
We are in the middle of a 2-month bike tour with our 1-, 3-, and 5-year-olds, camping the whole way. We've been on this trip for nearly four weeks, and we've already proven to a lot of our skeptical friends that bike touring with a young family can really work. The kids are loving it, and we are having an amazing time.
Disclaimer: we also have two younger brothers and a friend with us, so the extra help from other adults is amazingly helpful.
My wife and I have been planning an epic adventure for this summer since all our kids would be of an age that we could take them along, and since we aren't expecting a new child, we knew this would be the summer to do such a trip.
We didn't quite know how long we could be gone on tour, so we left things open-ended in case touring with three kids didn't work out. After about 10 days we committed to the trip and purchased our return tickets for the end of July.
We started in Nantes, France and will be heading to Vienna Austria.
We typically ride about 30 miles a day, and our average speed is about 8 miles an hour. The Eurovelo 6 route follows the Loire river, and is amazingly easy to follow and makes you feel very safe. Many of the trails thus far have all been dedicated bike paths, or roads with very low traffic, like a car every 10 minutes or so.
